This sort of nonsense is why I hate using delivery services. Everybody gets screwed except the man in the middle company.

Same here. Between the banks (CC) & gov't. taking a cut, any money the small biz owner doesn't have to declare helps. Some people work harder than other people. True but not just tipped employees. There's slackers in most vocations and some are so good at coasting they actually get promoted so their immediate supervisor can be rid of their negativity.

I’ve only changed an Instacart tip to increase it.
One nice young delivery fellow and his wife are/were having a baby this month and we decided to bump it up from the 20% we had initially specified.
