This is my weekly, "iTunes is junk" posting. I've decided to do this every week. Here is my current complaint...
I synced five movies to iTunes and went on vacation. After watching the movies I deleted them manually from my iPad. Many months later I am now preparing for another trip. I plug the iPad into iTunes and it wants to re-sync those five movies from last time. So I need to uncheck those movies to prevent the sync and here comes the rub. iTunes has no mechanism to easily show me which movies to uncheck. I would have to scroll through over 1,000 movies looking for them. Now if you've ever tried to scroll through the sync movies screen you will know this is completely impossible as it simply doesn't scroll. It just sits and smiles and then slowly moves after a few minutes.
So now I am stuck syncing those five movies to my iPad just so I can know which ones they are. Then I can un-sync them and sync the ones I actually want. This does not make any sense.
If I'm missing an easy solution please let me know. Otherwise...bbbblllpppp on iTunes.

I submit that Apple should no longer be permitted to refer to this piece of shiteware as "iTunes." The real iTunes died a quiet and ignoble death years ago.

Apple does supply a better solution.
Make a regular playlist and name it "to iPad" and sync just the playlist. Connected or not, you can check the playlist and add or ditch stuff you want removed during the next sync!

Well that is an interesting solution that I have not seen before. It does seem like a much easier way to keep track of what is synced. On the downside it appears there must be a playlist for movies and a playlist for tv shows. Multiply that times the number of iPhones and iPad's in the house and it is a considerable number of playlists. I wish the regular sync panel worked better but in the meantime I think you have a good solution. Thank you!

AA, I think you misunderstood almost the entirety of my post.
First I pointed out there is no way to determine which movies itunes will sync to an IOS device which is problematic when you DONT want them to sync. I don't think that qualifies as a desire to bulk up itunes. The problem could be solved by simply adding a "unselect all" button. Maybe it doesn't even have to be a button. Some programs allow option-click to be select all or unselect all.
Second I don't see why you think it is a "small" problem. If you ever tried to sync movies using iTunes i think you'd see it is quite the hassle.
Third, when I talk about slow scrolling I am still talking about the sync pane rather than the normal window for viewing movies. There is no way to switch to a list view from the sync pane although if there was your suggestion would probably work quite well.
The sync pane is apples idea, not mine, and they should make it work. I understand why it doesn't of course. Apple wants all content to come from them and be delivered through the cloud which would make this area of itunes completely unnecessary.

Turn off auto sync and manually transfer your movies. Or, as AA suggested, switching to list view will give you some options. Click the "check" at the top of the appropriate column to move all checked items to the top of the list. You can also control-click on a selected list of items and "check/uncheck selection".
