As a diabetic, I never make dessert. What is a simple one to make for guests?

Fruit and some quality chocolate.

No one ever turns down 2 scoops of chocolate HaggenDaz and raspberries on top.

My buddy's young daughter's always got to make brownies for dessert for some simple mix.

Some canned frosting or whipped cream, and you're done.

Send any leftovers home with your guests.

If you buy Redi-Whip or whatever, you'll probably have left over temptation. A carton of whipping cream, a little sugar, and maybe a splash of vanilla, and a mixer.

Or fruit.

Or pie. Some supermarkets with a bakery have great pie.

Ice cream is good, but you'll likely be facing temptation the next day or two.

A delicious and very easy dessert involves getting the Triple Ginger Snaps from Trader Joes and making mini-ice cream sandwiches with two of these and a bit of vanilla ice cream between. Keep in freezer and then serve. Awesome, look fancy. I like breyer's vanilla bean, but small thing of Haagen Das also good.

Not fancy, but good…


Banana Pudding

two packages vanilla pudding
3 cups milk
3-4 bananas
1 tub whipped topping

Make the pudding, fold in half the topping, layer bananas and pudding, surround the outside with wafers, top with remaining whipped topping

You can make numerous improvements, such as cut back milk and replace with sweetened condensed milk. Use cooked pudding rather than instant; use whipped cream in place of topping; add nuts, etc...

Seems like at this time of year a fruit and cheese platter would be good - 2-3 really good cheeses, fresh berries and melon, maybe some peaches.

Lots of folks are watching their waistlines, and this is something anyone can eat - gluten free (which seems very important to some folks) and those who don't do dairy can still eat the fruit.

Bonus is that you can eat some too!

However, if you want something "fancy" a good, homemade chocolate mousse with a bit of whipped cream is easy and quick.

Pound cake (store bought) + strawberries + whipped cream = You don't have to bake a thing.
My parents usually do this as my mom doesn't bake as much anymore. I'm watching calories,
but I love this occasionally with coffee after dinner and on special occasions. Angel food cake
cuts the calories even more.

Another option is to grill fruit- peaches, pineapple, plums, nectarines, figs, apricots all do well on the grill. Serve with ice cream or lightly whipped and lightly sweetened cream or you can do some simple syrups with herbs. Brown sugar syrup and balsamic reduction also work well.

a BIG second recommendation on Zabaglione. the French Sabayon.

it's crazy easy and soooooo delicious. you can make it as sweet as you like, and I like it less sweet, more savory.

and it's gone rather quickly, so no temptations long after.
