As a diabetic, I never make dessert. What is a simple one to make for guests?

Summer solution: bowl of sour cream, bowl of brown sugar on the table. Guests dip fresh strawberries in sour cream then roll them in brown sugar.

Almost as easy: key lime pie. Mix together 1/2 cup lime juice, two egg yolks, and a can of Eagle Brand milk. Pour into an Oreo pie crust and refrigerate. Top with Reddi-Wip.

For winter: French silk pie

Microwave 3 squares of baking chocolate in a bowl about 90 seconds to melt them. Divide a stick and a half of butter into several chunks, and microwave them with the chocolate another 60 seconds or so. Add 3/4 cup sugar, 3 eggs, and 2 tablespoons vanilla. Beat until smooth and pour into baked pie shell.
Refrigerate 2 hours. Top with whipped cream to serve.

for an informal crowd, whole strawberries + 1 bowl each of sour cream and brown sugar. Dip in sour cream, then brown sugar...yummy.

As a bonus, you are likely ok to eat a couple strawberries, as I think they are lower on the glycemic index, no?

....use canned pie filling....the ones with 'no sugar added'.....they add splenda to sweeten it.....
