what to use to convert MP4 and/or.avi to DVD?

Toast will work and even give you a menu, but it's SLLLLOOOOOWWW.

I like MPEG Streamclip, or ffmpegX, or VisualHub.

Give em a shot. YMMV.

Toast works OK, but you need to make sure that your machine has the proper QT plug-in for the codec that the .avi is.

I tried to burn a DVD from an .avi file on a drive that didn't have DivX loaded, and the disk didn't have video.

MPEG2 Works 4 works much faster than toast for such a thing and can even make a disc image in the end...
