We recently went "minimalist" --- just enough room for (flat panel) monitor, keyboard/mouse and not much else. Various other things are off to the sides or on a wall behind the desk(s).
We bought two of these dining tables in the "As-is" section and placed them end-to-end to form one long table. It serves as two workstations: http://www.ikea.com/us/en/catalog/products/70116059 Leather desk protectors at $25 each protect and finish them.
Yes, they are very "assembly line" in terms of style but if the point is to utilize something "different" it works.
