heading to SA with my now unlocked JB'd 3G. Once I get a local SIM, will I be able to load apps on? Is there anything else I need to know with regard to activation there?

Malbec is an underappreciated wonder. I hope it stays that way for some time, otherwise prices will go up.
As far as I know, once you have a local SIM installed the phone will work as it does in the U.S. Make sure to check data costs with the local SIM so there aren't any surprises. Also, don't forget to use WiFi when it's available.
Get Skype if you haven't yet so you can make cheap international calls, and calls of all types when on WiFi.

Another vote for Skype. I use it everyday for International Calls. :thumbsup:
