[ Culinary Adventures ] So I bought some goat this morning…
#1
Yes, another one of Paul F's little food tangents… Ramen noodle with pan cooked chicken chunks last night, tonight, goat stew! This time in almost real-time! (as if that makes it any more interesting, LOL!)

There I was, in the local hippie store (health food Co-Op)… was just looking for a hunk of ginger (my usual grocery store just had some old nasty tough looking ginger)... which I forgot to buy once I passed the meat counter…

Let's see… steak so expensive it should come with a ranchers daughter, decent looking pork chops for a reasonable price, beef stew meat, goat…. Wait… What?
Let's see here… "Lake County Fair Goat, various cuts, $6.99/lb", which ironically, was the same price as the "beef stew meat" next to it.

I'm sitting there staring at the goat for a couple minutes… wondering, "OK, what would I DO with it…" - when the helpful guy behind the counter asks if he can help me. I answer "once I figure out what I'd do with the Goat there, I'll let you know"… he says something about letting him know when I'm ready…

Couple minutes later, still staring at the goat sirloin and, uh, "ham" pieces (shanks? shoulder? couldn't tell for sure)… second guy asks if he can help me. I think I was making 'em nervous or something.

So I get 2.5-ish pounds of sirloin and whatever those leg pieces were.

I run the goat home, and begin internet research on "goat stew", figuring that even I can't screw up a stew TOO badly…

Most of what I came across was recipe's for Goat Curry… which I don't have enough experience with curries to try, yet. A couple intriguing recipe's for whole roast goat… but I KNOW I don't have the experience to tackle that yet! Nor do I have a whole goat!

I cobbled up a recipe based on two "goat stew" recipe's, and one that was for "Lamb Stew (or Goat)".

Goat (duh!)
Half an onion
a couple shallots
chopped baby carrots
1 red bell pepper
3 yukon gold potato's, chunked up.
Good tablespoon of minced garlic
teaspoon or so of chili garlic sauce (a thai concoction I'm getting to like… in moderation!)
Fresh chopped basil, sage, and rosemary.
Paprika
Black pepper
two cups of beef stock (I used a "better than bullion" from a jar)
One cup red wine (burgundy)
About a cup of tomato sauce (a canned "fire roasted tomato recipe starter sauce" I had… should have used a thicker sauce with less seasoning of it's own).
One can of Navy Beans.

I trimmed up the meat.. nice and rich red color, some fat, but less than you'd find on beef shanks.
Browned the meat in my dutch oven, removed the meat, threw in the seasonings, and vegetables… sauteed until the onions started looking translucent.

Add back the meat, add the diced potatoes, the navy beans, the tomato sauce, some more pepper to be sure…

And Viola! a slightly nasty looking pot full of stuff….

I'll let you know in a few hours how it comes out! It's simmering away now…

I've got a nice looking loaf of Potato bread in the bread machine to go with it - and it just beeped at me to tell me it's done!

Looking good Paul ~!~ Cooking low and slow will help that goat
to become chewable, adding a little Red wine vinegar or any
substitute vinegar will help tenderize it also.

Your dinner looks and sounds delicious *(:>* The fresh bread
will also go great with your meal and a glass of wine *(:>*

I will make some banana, mango pancakes soon this morning.

I'm hoping that between the tomatoes and the red wine, that vinegar may not be necessary... first tasting will be in a little while.

I will make some banana, mango pancakes soon this morning.

That sounds REALLY good!

Lilian is cooking fish and eggs for her breakfast so I have to wait my turn in the kitchen *(:>*
Been raining cats and dawgs for hours . . . a warm morning brandy makes the waiting easier
while appeasing some persistent back pain Confusedmiley-shocked003:
