Most of the big V8 models can adjust the seat back further than the normal range by moving the mounting nuts. Peek under the seat and see if they can go back. His problem will be the steering wheel in the stomach. That can also be resolved with an aftermarket steering wheel (assuming power steering).
I had a very large friend who did that with his 70's lead sled.

My brother had an early 70s GTO when I was young. My first car was 442.
I got my friend (above) to BARELY fit into a new Aventador roadster, head sticking out top. We just took an i3 BMW out Monday. That's plenty big for many people. And fast.
I actually think bench seats MIGHT be better for his wide butt, too. He does not think so. I like bench seats.

I'd tell him to get a '66 Imperial, and make a sleeper out of it by building a hot 440 (he's gonna want at least 500 hp), beefing up the tranny & brakes and riding in great style at high rates of speed.

Get a 65 or 66 Catalina convertible. Solid rides with great curves and lots of wow factor. Plus, they can go! You go to shows and you're likely to see lots of GTOs or Malibus, but the big girls are what the big guys love driving.
I like Uncle Wig's suggestion of the Imperial. Those are some awesome cars. And of course, a 64 Cadillac or Lincoln would fit the bill as well. All unusual cars that turn heads.
