Home made pickle popsicles

I don't know what I was thinking this morning.
These things are awful.
Like, gross.

Not even 'so bad, they are good' .

How does one freeze a pickle? Just stick it in the freezer ?

I picked what might be the last of the pickling cucumbers from the garden this morning and with yesterday's had enough to make a batch of bread and butter pickles. I had about half a pint of canning brine leftover so I screened out the spices seeds and put it in the blender. Added a diced cucumber with the seeds scooped out. Made a "smoothie" with it and filled the popsicle molds.

You can buy these things in the store. Well, down south anyway. I never tried one so I don't know if mine came out "right" or not.

I had a good run with pickling cucumbers this Summer so we've put up 80 pint and 1/2 pint jars of pickles and relish, sweet relish with peppers and onions, sweet relish with no peppers or onions, sweet relish with just onions, sweet relish with a jalapeno, dill relish, dill pickles, dill pickles with jalapenos, bread and butter pickles with and without onion and started now doing some salsa.

Brine gets bitter when you freeze it.

You need to add something to smooth it out if it's not already sweetened either with sugar or from pickling a sweet vegetable.

(Yes, alcohol is an option.)

A lot of frozen pickle brine is the leftover brine from pickles where sugar was used in the brine.

2 cups of sugar to 3 cups of cider vinegar in bread and butter pickle brine (plus some spices).


I don't think bitter describes it. It's absolutely ten times stronger frozen.
