To me, leftovers are 99% as good as fresh meals. But, I'm not crazy about leftover salads, greens and lima beans.
Leftovers fans - what foods do you not like as leftovers?

Fries. I still reheat and eat them, but it's never the same. Also, nachos.

Pretty much any seafood, with the sole exception of smoked fish dip.

Tomahawk rib-eye steak. Reheating makes it a wee bit too "medium". I'll still eat it though.
Fish. Especially reheated in the office microwave.

Anything fried. meh. Tomato sauce based things are AMAZING the second day though.

I will agree that most tossed salads don't store well, along with single serving portions of meats cooked to medium-rare/medium, and pasta with cream/egg sauces.
My favorite spaghetti sauce is best as leftovers (diced roma tomatoes, garlic, basil, olive oil). Ham and Lima beans is good for a couple of days. I make Mac and Cheese to purposely have leftovers. I will occasionally buy Costco pizza and freeze it in portions to have leftovers for a week.

Fried items are better if you warm them in the oven old-school; microwaves make them soggy.
Dishes with salad greens are pretty much one and done. But other than that, generally if I like it fresh, I like it left-over.

My uncle won't eat any leftovers. His wife is a saint.
