we all have these old DV and mini-DV and other assorted cameras laying about. is there any hope to hook them up to a machine that would record the image vis-a-vis some sort of interface?
old video cameras as security cams?

Yes, but I think the majority of them will be only 480p with maybe some of the newest ones recording a somewhat grainy 720p. Lack of resolution might be offset by being able to have a high zoom.

My Sony and Canon models both had a time-lapse setting where you could set the interval from a few seconds to minutes. Using the LP setting would give you quite a bit of recording time. Using a firewire connection, they were recognized in pretty much any video capturing software. ( including Skype, Quicktime, etc.)
