What notes app do you use & like?

I used to use Apple Notes a bunch. I thought I'd branch out and try some other options. Eg, OneNote and Notion. I don't like either of them. I'm going to try something else, or maybe just go back to Notes. Is Notes any different in Monterey vs Catalina?

My needs are:
Cloud sync
Groups/categories/folders with individual notes inside them
Basic formatting like bold, underline, bulleted lists
Formatting is retained when copy & pasted into other apps - at the very least line breaks (OneNote and Notion both fail at this.)

Notes.

I have my mom and some tech-deficient friends organizing their passwords in the Notes app (in locked/encrypted notes) in tables now.

I mostly use Apple's Notes but I've found that they don't always reliably sync between my many devices. So I only use it for things that aren't critical. For important things I just create a text document in Dropbox which ALWAYS works across my devices but it's not very sexy and doesn't allow for fonts changes etc. I'd like to find a more elegant text editor that works with dropbox but haven't found that magic app yet.

I use Notes in iOS, and for my minimal use, it's OK.

One feature I'd like is the addition of an Edit button, just like so many other Apple apps have, to protect data entered.

Being occasionally ham-fisted, I sometimes inadvertently delete, alter, scramble info on a note page, when merely trying to read or scroll through.

In iOS, no one can Command-Z.

In iOS, double tap three fingers on screen gives you undo.

Yeah, I've done that a few times, when I've realized I've damaged data.

I'd like to prevent it.

I use Apple Notes and Evernote.

But for notes that I need quickly on every possible device, I use Google Keep. It's the simplest one. Website, Apps for every kind of phone operating system.
