no one has ever been able to answer this for me. If the human eye registers video as continuous, rather than a bunch of frames, at about 30 fps, why the hell does some one need 80 fps? Is it bragging rights?

Depends on the differences between the frames. Most of the time for first-person games, 30FPS doesn't really cut it. I get a headache if it's under 70FPS.

fair enough. I assume the difference is smoothing of the animated grahics. I work with very high frame rate video, and beyond about 60 frames/sec, I can't even detect frame by frame changes.

I've been wondering the same thing. I know we need a minimum of 30 frames per second for smooth video, but (in the days of CRT's) 70 frames per second was what I needed to keep from getting a headache as well.

You can get by in tournament play if the minimum frame rate never goes below 45FPS.
If the refresh rate drops below about 70FPS, you can get flicker between the screen refresh and the 60Hz LCD refresh. It is not really noticeable unless your eyes are scanning across the screen like you are quickly swiveling your head back and forth.

One of the tactics in CS:S is, when you have the ak, you move it in a counter-clockwise direction as it fires. That just happens to be the reverse of the spray pattern for that weapon. That means it fires directly in the center of your circle. So when you see it chop... |
