Problem adjusting volume of iPod on iPhone, jerks back

I have a problem controlling the volume using the on screen slider. It jers around and goes back to original spot? Is there a setting or just big fingers?

Have you done a restore?

Try a reset and if that doesn't work, do a hard reset.
