in the last few months, when we run a faucet in one part of the house you can hear what I'll say is the sound of air or water hissing (it's not loud) in another part of the house.
It's kind of a low level whir.
There doesn't appear to be any running/leaking water when nothing is on.
Is this possibly a check valve that has lost it's check?

Could it be the sound of water running through the pipes?
Could it be the water meter spinning?
Sound can transfer a long way through copper pipes.
Are you sure you have a check valve? A malfunctioning check valve will most likely result in water hammering.
Oh one more thing came to mind. Do you have an air vent? It's connected to the water system at the highest point (like the attic) to remove air from the pipes.

It could be A, but we never heard it until a few months back.
Definitely not B, the meter is a good 60 feet of pipe from the house, and like it said it's a new sound.
Although they did change the meter to an RF meter a while back, but I think it was before we heard this sound.
We do have one check valve, a couple years old.
We had a combined hot/cold spigot installed with a Taco mix valve to fill the turtle tank so we would not be disassembling the kitchen faucet. It has at least one check valve on it.
We do have an air vent (I think by code).
Could it be another valve that is leakish?
We have an AS single lever shower that I have a replacement cycle valve and pressure balance valve for.
The the control had started to require frequent jiggling to get a consistent pressure and temp.
Could that be a related issue?

Does this valve have a vacuum breaker installed ? (probably should by code)
I have had mix valves in the darkroom start to have gasket failures and they can leak air (suction)

Re-reading I see that you have check valves which probably satisfy the vacuum breaker requirement.
The vacuum breakers on my mix valves sat on top and had a replaceable gasket it.
Plumbking would be the expert here, but it is conceivable to me that you are hearing air being
sucked in if you have a vacuum breaker or check valve not sealing. If they are serviceable
you might try cleaning the seals of any deposits.
