At least the sun is out! I use a dark chocolate brownie mix and make cookies out of that(brownie mix, 1 egg, 3 tbsp oil, 4 tbsp water, 1 tbsp instant coffee)! Bake at 350f until desired doneness. It takes only 10 minutes or so to get to where the edges are just set. My non-lethal secrets include a teeny bit of cayenne and salt, a bit of additional cocoa powder and instant coffee, and most importantly, *underbaking* them. I use a silicone baking sheet so that the cookies can be removed(parchment would also work)... served warm and gooey. This time I added mini marshmallows and Oreo bits to the batter, too. Chocolate chunks don't hurt. I stayed in the kitchen a little longer and made a brown butter-shallot cream sauce for those ravioli... smells great! I roasted a turkey breast and made stuffing and mashed potatoes with gravy. Also had some homemade cranberry sauce. I will walk the dog soon. Then we will enjoy pumpkin pie and coffee. |
