A few Bond movies come to mind - the opening sequence of The Spy Who Loved Me is great. For Your Eyes Only as well has a few choice skiing scenes while Bond is being chased by an Olympic Biathalon competitor and his goons.
For more risque scenes, try Hot Dog: The Movie. The Chinese Downhill is classic.
