paid $8 for 5/lb of whole wheat flour yesterday

up in a little over a year from $5 that it has been for a decade or more.
and I had to go to 3 stores to find any.

despite wheat commodity prices going down by half in the last year.

In theory, wheat is a trailing commodity price. IE: when the commodity price goes up or down, the price change is reflected at the consumer level 6 months or more later.

Other than the occasional almond croissant, anything baked I bake at home coz we don't like soft flavorless bread with 50 ingredients on the bag. Only Alvarado Street comes close.

Russia, because of climate change, the future breadbasket.

The US has given away technology manufacture, clothes manufacture, failing in automotive manufacture (except foreign car companies in rtw states. IE: no union and much lower wages than UAW), pharma, blah, blah, blah.

Canada grows wheat and lots of it. With climate change they will grow even more.

I bought a tiny 2.5 lb bag of flour yesterday to make a roux with and that cost much more than I thought it would. A little less than 3 bucks.

no idea why the regional gouging. Just got back from Kroger. 5# of whole wheat flour was $2.79 :dunno: I checked because of this thread.

blend it 50/50? Make your bread beige? I do that with "french" style in my bread machine, along with a healthy shot of EVOO.

I use it with other flours for sure. My main sammy bread is 8 grains or so.
