The first thing that leaps to mind is Blu-ray disc support as well as USB3 support. Blu-ray is a big bag of hurt; here's hoping USB3 is just a coin purse of annoyance.
I'd also like some better interaction with applications. For instance, I want iTunes to launch and sync when I hook up my iPhone, sure, but does it have to insist on jumping to the front? Can't it just stay in the background? (Same goes for iPhoto.)
And, though not directly a OS X thing, I'd like iWeb to become a bit more robust on a lot of levels. Before that, though, I'd like it to update every page I change (across all sites, not just the one in the forefront) (sorry, it's hard to explain -- but it used to be that iWeb updated each page in your collection (I have a handful of web pages and they're not all under the same banner as it were); now, you have to go site-to-site to upload changes. This seems like a big step backward. And I'd love it if iWeb would just do its damn upload and not insist on continually bouncing the dock icon until I click back on the program and acknowledge it.
