I think it's interesting that so many comments refer to bundled apps rather than OS X itself.
A few things that come to mind to me:
- TRIM support
- Fix the bug that causes photoshop to often crash for many users. Apple has admitted it's on their end. It was introduced with 10.5. I'd prefer it be fixed with 10.6.3
- Better folder support in the dock
- USB3 support
- Something with networking needs to be fixed. I've had an issues, as well as others here, where after a machine has been up for a few days it can't show AFP shares in the Finder.
- Better control of the left side bar (column view) in the Finder.
As far as other apps go...
- I echo the comment about iChat supporting other protocols
- iCal needs to go back to allowing editing of events by double-clicking (not double-clicking and then clicking edit.)
- QuickTime X needs a Pro version
- iTunes needs better sharing options. Home Sharing is an improvement but, for example, I should be able to edit playlists on a shared library.
