All indicators suggest VLC has the ability to record a stream... There seem to be plenty of options for it.
But I can't actually get it to work. Rather, I appear to be capturing a stream to a file but it doesn't play back...

I found this set of instructions but it's for a linux instance and the dialogs are different than OS X:

OK, maybe I figured it out with VLC 2.0.3... use the File menu > Streaming/Exporting Wizard, and the format should be .ts file then transcode that later into something sensible like MP4.
