Why does iTunes launch itself and start playing music?

There are some weird file extensions that itunes claims ownership to that are used by adobe apps. I don't think there is a central place where ALL file associations are visible (anymore), but there must bea way to see them - get in there and change everything that isn't mp3 or aac (or whatever else you have itunes running) and kill the association.
