So, is "Linens not available" a new hotel thing? Or am I just shopping the low end hotels?

No linens is typical for hostels. I've never seen this for decent hotels though. This used to be common for travel on hiking trails in Europe years ago. The inn or cabins would provide blankets and pillows, traveler would use the sleep bag.

You can buy sheet sleeping bags on Amazon. Some have a pocket for the pillow. I bought one for my son, who travels for school activities and has had to deal with some crappy linens.
