I'm a 'newgrass' fan from way back, and have owned a few of these "Pickin' on…" discs over the years. My favorite is "Pickin' on Santana"; some very nice renditions. And for the most part, these productions are done using a group of some of the best pickers around. I agree, though, that some of the projects are pretty lame.
There's a long tradition of bluegrass versions of popular music & jazz. One of my all time favorites is Jerry Douglas' version of Weather Report's Birdland, from this disc:
