Help me cook a steak
#9
[quote Don Kiyoti]Saw on the New York Times website about cooking steaks under the broiler in your oven. It's like upside-down grilling. Basically you get an iron skillet and leave it in your oven, which is turned up to maximum, oven-cleaning temp
Oven-cleaning temp? Good luck with that!

I read the same column in the NY Times (Mark Bittman, The Minimalist), and it said nothing about oven-cleaning temp.

Most, if not all, home ovens automatically lock the door when set to oven-cleaning temp. I've heard many stories of people doing this unintentionally, and what came out of the oven afterwards was not a pretty sight.

Other than that, Bittman's technique did sound interesting, although the cut piece of steak in the accompanying photograph looks way overdone to my taste.
