I read the same column in the NY Times (Mark Bittman, The Minimalist), and it said nothing about oven-cleaning temp.
Most, if not all, home ovens automatically lock the door when set to oven-cleaning temp. I've heard many stories of people doing this unintentionally, and what came out of the oven afterwards was not a pretty sight.
Other than that, Bittman's technique did sound interesting, although the cut piece of steak in the accompanying photograph looks way overdone to my taste.
