I've found the key to good coffee is to use lots of coffee.
You wouldn't make a second pot with old grounds. But that is exactly what you are doing if you pass too much water over not enough coffee.
Use enough coffee so that the extraction does not get those awful bits at the end. Then dilute it if it is too strong.
Diluting good strong coffee with clear water is much better than diluting good strong coffee with water filtered through used up grounds.
