Although I love fresh greens—especially arugula!—there are thousands of salad combinations you can make without them. Lots of ideas can be found by searching the web for "salads without lettuce" or something like that. Greek salad "village" or "country" style usually means without lettuce.

Ruby Tuesday has a nice unlimited salad bar for cheap. Skip the leafy greens and fill your plate with the good stuff. It's not fine dining, but I like it.
