Just do simple stuff. Hardly any graphics except reducing picture storage size and iPhoto. Graphic Converter or the like for converting PDF's to Jpgs. Never understand why people send me photos in PDF of big ugly equipment that take up MB's instead of KB's.
I would like to track down cheap version of XP or whatever and be able to use transfer programs for phone sim card. Maybe my ancient Casio PDA too. PC programs not available for MAC.
Well why spend more money?

There never was a single core ("plain"?) MacBook. There was a single core Mini.
Do you mean Core 2 Duo vs. Core Duo? (And now vs. Core 2 Duo Santa Rosa)

Unless difference in price is tiny Macbook Core will be sufficient. 500 mhz iBook with 368 ram has never really bothered me. I hope the two models both will run XP well.

core2 is UP TO 45% faster.
But if you don't have 4GB in it, (or 3.3 in CoreDuo), you probably won't notice it.
Down road - full 64 bit capabilities, 4GB max RAM, newest GMA 965 chipset / x3100 graphics - those are what I'd be looking at as a comparison.

the biggest difference among macbook (pro) revisions is the amount of ram they take. the speed difference is quite minor compared to having twice as much ram.
