who will be drinking bubbly on the eve?

I don't care for it, so I'm probably going to have a nice Fume Blanc with my Asian-based food.

But, if you do like bubbly, I recommend trying some from New Mexico. Yup, support the good ol' USA economy - plus, it's quite good. Or, Cava from Spain is also quite good.

What are y'all drinking (non-alcohol included) ?

Let's see here, should I buy champagne based on the recommendation of someone who doesn't like champagne, or should I try to find a recommendation of someone who does like it? This is a tough decision.

it's not that I can't drink it, it's that I prefer other drinks.

I've been an oenophile for some time, so you would be wise to take my advice

I like good champagne, and I'm sure I'll have, at least, the obligatory serving at the stroke of midnight. My preference is for Vueve Clicquot , which is tasty and not overly expensive. I suspect that many who don't like champagne have actually only tasted the cheap $4 stuff made in California, which might not even be good enough for Mimosas.
