Get one of these, run the MBP closed, and attach a large external monitor, which you already have at least one of from the G5 tower.

Or, run the MacBook Pro open and then you've got two monitors, one to park stuff on and one to work on.

That's what I did with my MBP, until I got my 27" iMac. Now I've got my old 20" Dell monitor to park stuff on!

I use my iBook G4 laptop as my home computer, docked with a big screen, Matias keyboard, outboard hard drive, scanner, printers, etc. I expect to email, surf, and occasionally use Photoshop, PowerPoint (or Keynote), FreeHand, Illustrator, and InDesign. Would I be happy with this as a replacement?

I don't get it. It sounds like a refurb mini at $429 or $499 (or $599) would be your ideal replacement.
