Lots of Black folks have found Aunt Jemima really offensive for a long time, and I think it makes sense to measure your discomfort around having the name changed (I'd guess, pretty small) versus the discomfort some (not all, vision63) feel about having to see that image every time they shop for groceries.

A little empathy can go a long way.

Ignoring the name change for a moment, why does the pancake on the new label look less appetizing than on the retired version? Flatter, less fluffy. Or something.

Pancake looks to be different, and I can say for sure that the new image is far more compressed than the one of the original, all the highlights are blurry so less shiny yummyness.

The change is good. Snipping off the vestigial tails of the racist past shows that the clock on even casual, ‘no big deal’ racism has run out.

The name in this particular case feels over worked to the point it feels like a bad store generic name. Try again.
